General Food Categories
Food in the menu are grouped as follows:


1.Main Dish
The main dish usually includes meat, poultry, and fish and other seafoods. A combination of these foods can also be part of the main dish. Cooked vegetables, Such as chopsuey, pakbet, and laing are some of the Filipino main dishes. Foods are considered heavy or rich when they contain a large amount of sugar or fat.

2. Bread and Cereal
Filipinos are rice eaters. B Bread is usually served only at breakfast. Noodles or rice can be served with the main dish. Spaghetti with meat sauce is usually served as part of the snack or merienda.

3. Fruits and Vegetables
Western usually serve salads made with tomato, celery, lettuce, and other vegetables. Fruits and vegetables add variety and nutritional balance to the meal. Food that is high in vitamins A and C should always be served at mealtime to meet the daily requirements of the body.
Salad made with uncooked vegetables is a very nutritious and flexible diet. Salad may be served at the beginning of a meal as an appetizer or as the main dish of a light meal.

4. Dessert
Desserts are given at the end of a meal. Heavy meal requires a light dessert. Fruit desserts have nutrient content. Cake and ice cream are rich in carbohydrates. Thus, they should go with light meals.

5. Beverages
Beverage is given as a refreshing drink during or after meal instead of plain water. It should go with the main course or dessert. Although milk is a nutritious beverage, Filipinos would rather drink coffee or soft drink.

6. Snacks or Merienda
A merienda is an important part of the eating pattern of Filipinos. It contributes significantly to the nutrient and calorie requirements of an individual. Snacks should nevertheless be planned for good nutrition.


Planning for High Food Acceptance

Does the family enjoy eating home-cooked food?

High food acceptance in family meals depends upon:

1. Planning and serving Interesting combinations of food
2. Maintaining a favorable atmosphere during mealtime

Here are some do's and dont's in planning a high acceptable meal.

1. Make interesting combinations in menu planning. The most common breakfast combination is tapsilog (tapa, sinangag and itlog a filipino dishes), served with hot coffee or chocolate. Fried fish may, also be used instead of tapa or dried meat.

2. Recycle leftovers can be served preferably on another day. 

Example: Fried fish can be cooked into sweet and sour like escabeche (a filipino food).

3. Do not serve foods that have the same bland flavor for a meal. Examples: macaroni and cheese, bread and custard. Do not serve more than one wrong-flavored food in the same meal. 

Examples: sardines and salmon, chicken curry, and spaghetti.

4.Include hard and soft foods in the meal, so that the amount of chewing required will bevaried.
Examples: soup and vegetable salad.

5. Apply the principles of color harmony in planning the menu. Attractive food enhances the appetite. Do not forget to decorate the table with flowers and beautiful linen if needed.

6. Serve hot and cold foods in the meal. Even in hot weather, there should be one hot dish to stimulate the flow of digestive juices.

7. Try to make mealtime a period of pleasant sociability. Reserve discussion of personal or family problems for some other day. Do not scold or discipline children at the table.

Breakfast

Breakfast is the first meal eaten at the start fast each one experiences during sleep, usually about 8 to 12 hours. When the body wakes up in the morning, it needs energy to do the routine activities of the day. Some people do not feel hungry in the morning, while others have big appetites.
 Growing children and teenagers need a lot of energy for work, play, and other activities. It is, therefore, very important that they take their breakfast regularly before they go out to play.
The breakfast menu varies greatly with country, locality, and even Occupation.

Filipino Breakfast

The Filipino breakfast may of consist of the following foods depending on the preference and budget of the individual
·         Rice, porridge, champurrado, bread, or boiled sweet potato or
Fried fish (dilis, tuyo, tinapa, or daing) tapa, longganisa, and fried or boiled egg: coffee, milk, tea, juice, salabat, or chocolate (filipino dishes)

American Breakfast
The American breakfast may consist of the following: fruits, orange juice, coffee, and doughnut. It may also include steak and potatoes, or cereals and eggs with ham, bacon, and sausages. Waffles, griddle cake and French toasts are also breakfast favorites. Coffee is considered essential to breakfast by most adults.

English Breakfast
The English breakfast may be heavy or light consists of meat, such as ham, sausage or bacon, and some fruits. 

Continental Breakfast
The continental breakfast is a simple meal which consists of coffee and rolls with butter and preserves. This is very ideal for working people and for those who have no appetite to eat in the morning.


BRUNCH

A brunch is a combination of breakfast and lunch, usually taken at (10:00 to 11:00) in the morning. More food is served during brunch and for a complete setting, it can be plain or fancy.
